INGREDIENTS

  • 1 – 2 Racks of lamb rib
  • Freddy Hirsch Hunters® Biltong Seasoning (802331)

METHOD

  1. Score the fat side of the rib with a sharp knife and with spice.
  2. When preparing the fire, allow enough space for rib to be placed standing - to allow for fat to drip away from the coals.
  3. Cook the rib over medium coals for about 2 – 3 hours in total turning the grid as needed for equal cooking.
